Veggie Burger-Lentil Barley
I've made a lot of veggie patties… you know, those "meat substitutes"? Personally, I don't really care about substituting meat, but I do like a wee bit of variety in my sammiches.
The following recipe is, by far, the best. While I've experimented with substituting various other ingredients, the barley gives it texture and the lentils bind it well. The eggs seem to be purely optional, but the original recipe had them in, so I'll leave them here.
Ingredients:
- ½ cup dried lentils
- 1 cup of onions
- ¼ cup grated carrot
- Garlic
- 2 tablespoons of tomato paste
- 1 ½ teaspoons ground cumin
- ¾ teaspoon dried oregano
- ½ teaspoon chili powder
- ¾ teaspoon salt
- ¾ cup cooked pearl barley
- ½ cup panko bread crumbs
- ¼ cup finely chopped parsley
- ½ teaspoon black pepper
- 2 large egg whites
- 1 large egg
Step 1: Cook Barley
- Cook ⅓ cup of barley
- with ⅔ cup of water
- Bring to boil
- Cover, and simmer for 30 minutes
Step 2: Cook Lentils
- Put 1 ½ cups of water and ½ cup of lentils in a pan
- Bring to a boil
- Cover, reduce heat
- Simmer 25 minutes.
- Drain.
- Squish lentils using a masher
Step 3: Cook Vegs
- Sauté carrot and onion (6 minutes)
- Add garlic
- Add tomato paste, cumin, oregano, chili, salt
- Cook 1 minute
- Add to lentils
Step 4: Refrigerate
- Combine lentils, barley, veg, bread crumbs and parsley
- Add 3 eggs and mix well
- Form into 8 patties between wax paper
- Refrigerate for 1 hour
Step 5: Fry
Fiery Fruit Salsa Ingredients:
- ¼ cup of chopped pineapple
- ¼ cup of chopped mango
- ¼ cup of chopped tomatillo
- ¼ cup of halved grape tomatoes
- 1 tablespoon of lime juice (fresh)
- 1 serrano chile (minced)
To make, combine ingredients and refrigerate.
